摘要	本发明涉及食品领域，具体是一种羧甲基氨基多糖衍生物及其制备方法和应用。羧甲基氨基多糖衍生物结构式如式(1)所示其中，平均聚合度n取值范围是10‑3000。本发明制备简单，易于推广，所需设备及原料易得。研究表明合成的羧甲基氨基多糖衍生物水溶性好，具有极好的成膜性和保鲜性能，能够减缓水果水分的流失，可以广泛应用于水果保鲜领域。
其他摘要	The invention relates to the field of foods, in particular to a carboxymethyl glycosaminoglycan derivative and a preparation method and application thereof. The structural formula of the carboxymethylglycosaminoglycan derivative is shown in the formula (1), wherein the average degree of polymerization n is within the range from 10 to 3000. The carboxymethyl glycosaminoglycan derivative is easy toprepare and easy to popularize, and the required device and raw materials are easy to obtain. Research shows that the carboxymethyl glycosaminoglycan derivative synthesized by using the method is good in water solubility, excellent in film forming property and refreshing property, capable of slowing loss of water in fruits and capable of being widely applied in the field of fruit refreshing.
