The present invention relates to a fruit vinegar production method, specifically to a helianthus tuberosus fruit vinegar and a helianthus tuberosus fruit vinegar beverage preparation method, wherein a raw material helianthus tuberosus slurry is obtained by carrying out one-step mixing fermentation with microorganisms, the obtained fermentation broth is the helianthus tuberosus fruit vinegar, and the raw material helianthus tuberosus slurry preparation method comprises : mixing 50-75% by weight of water and 25-50% by weight of a pure helianthus tuberosus slurry, and adding sucrose to adjust the total sugar content to 20-24% (w/v, calculated as glucose). The helianthus tuberosus fruit vinegar and the helianthus tuberosus fruit vinegar beverage have more excellent nutritional values, tastes and flavors compared with the edible vinegar adopting grain as the raw material, maintain nutrients and aromatic substances in helianthus tuberosus to the maximal degree, have characteristics of red and bright color, rich fruit aroma, sour, refreshing and soft taste, and rich nutrition, have a certain health effect of stomach invigorating, digestion promoting and tonification, and adopt the one-step completion process of alcoholic fermentation and acetic acid fermentation to shorten the process and the production cycle so as to further reduce the production cost.
